Granola, or Blueberry Porridge With Honey and Whisky
At this time of year I find myself unable to choose between granola or porridge in the morning, will the sun peek out from behind that cloud?
Here is a delicious recipe for Granola from the good people at love and lemons. Beneath is my recipe for Blueberry Porridge With Honey and Whisky.
Blueberry Porridge with Honey and Whisky Recipe
Ingredients:
- Oats (use your preferred type)
- Milk or water (enough to cover oats by about 2cm)
- Fresh blueberries (a generous handful)
- 50ml whisky
- 1 tbsp honey
Method:

Prepare the Oats:
Fill a thick-bottomed saucepan with oats and enough milk or water to cover them by about 2cm. Bring to a gentle boil over medium heat. -
Add the Blueberries:
After a couple of minutes, toss in the blueberries. Stir gently as the porridge cooks, adding more liquid if it starts to thicken too much. -
Cook Until Ready:
Continue heating until the oats are soft, and some blueberries have burst, releasing their natural sweetness and colour. -
Make the Whisky-Honey Sauce:
Remove the porridge from the heat and spoon it into a bowl. In the same saucepan, add the whisky and honey. Heat gently, swirling the pan to combine the flavours. -
Serve:
Pour the warm whisky-honey sauce over the porridge. Serve immediately and enjoy the cosy, rich flavours.
