Our tofu is locally produced by Neil in Brick Lane, he’s one of the first tofu producers in London! It’s made to order in small batches with attention to detail resulting in a softer creamer texture and a more pronounced flavour.
Tetra pack tofu is injected into the container it’s sold in. Meaning the curdling process can’t be monitored resulting in a very different taste. The other rubbery version you get is heat processed and pasteurised after packaging that completely alters the flavour.
Ingredients
Tofu:
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ cup cornstarch
- Neutral oil for frying
Spicy Honey Garlic Glaze:
- 1 tablespoon neutral oil
- 10 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon gochujang
- 2 tablespoons brown sugar
- 3 tablespoons low-sodium soy sauce
- ¼ cup hot water
Instructions
1. Prepare the Tofu:
- Pat tofu cubes dry with a paper towel to remove excess moisture.
- In a bowl, season the tofu with salt, black pepper, and garlic powder.
- Add cornstarch and toss until the tofu is evenly coated.
2. Fry the Tofu:
- Heat ½ cup neutral oil in a wok or pan over medium-high heat.
- Fry tofu in a single layer for 2–3 minutes, flipping to ensure all sides are crispy.
- Remove tofu and place on a wire rack to drain.
3. Make the Honey Garlic Glaze:
- Heat 1 tablespoon neutral oil in a pan over medium-high heat.
- Sauté minced garlic for 30 seconds until fragrant.
- Add honey, gochujang, brown sugar, soy sauce, and hot water. Stir well.
- Heat until the glaze simmers and thickens, coating the back of a spoon.
4. Combine and Serve:
- Toss the fried tofu cubes in the glaze until fully coated.
- Garnish with scallions and sesame seeds.
- Serve immediately and enjoy!
