Ingredients

Confit Garlic:

  • 1 bulb of garlic, cloves peeled
  • 1 red chilli, sliced
  • Zest of 1 lemon, peeled into strips
  • A few sprigs of rosemary
  • Enough extra virgin olive oil to cover

  • 1 700g jar Bold Bean Co butterbeans (with bean stock)
  • 2 tbsp garlic oil from above
  • 200g purple sprouting broccoli (or regular broccoli), chopped
  • 2 handfuls parsley, chopped
  • 2 handfuls pitted black olives, chopped
  • Fresh red chilli, chopped to taste
  • Black pepper to taste
  • Juice of ½ a lemon
  • Confit garlic cloves from above

Method

1. Prepare the Confit Garlic:

  • Place the peeled garlic cloves, lemon zest strips, sliced red chilli, and rosemary sprigs into a small saucepan.
  • Pour enough olive oil to fully submerge the garlic.
  • Cook over low heat for 20–30 minutes until the garlic is tender.
  • Strain the oil and set aside the garlic cloves. Reserve the garlic oil for other uses.

2. Cook the Butterbeans:

  • Pour the butterbeans and their stock into a pan. Heat over medium for 10–15 minutes, allowing the liquid to thicken slightly.
  • Add 2 tablespoons of garlic oil and roughly mash the beans with the back of a wooden spoon.

3. Add the Broccoli:

  • Stir in the chopped broccoli and cover with a lid. Simmer for 3 minutes or until tender.

4. Assemble the Dish:

  • Stir in the chopped parsley, black olives, and red chilli.
  • Season with black pepper and squeeze over the lemon juice.
  • Gently fold in the confit garlic cloves and drizzle with additional garlic oil.

5. Serve:
