Bring a touch of nostalgia to your kitchen with these delightful Molasses Hermit Bars. Chewy, lightly spiced, and sweetened with raisins, these bars are a timeless treat that’s perfect with a cup of tea or as an after-dinner dessert.
Ingredients
Yields a large batch—perfect for sharing or storing!
- 300g White Sugar
- 100g Brown Sugar
- 250g Butter
- 2 Small Eggs
- 250g Raisins
- 350g Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Bicarbonate of Soda
- 1 teaspoon Cinnamon
- Dash of All Spice
Method
-
Prepare the Dough
- Cream together the white sugar, brown sugar, and butter until light and fluffy.
- In a separate bowl, mix all the dry ingredients (except the raisins).
-
Combine Wet and Dry
- Beat the eggs into the sugar and butter mixture.
- Gradually fold the dry ingredients into the wet mixture, ensuring everything is well combined.
- Add the raisins and mix thoroughly. If the dough is too sticky, add a little more flour to form a workable consistency.
-
Shape the Bars
- Split the dough into two portions. Roll each portion into a large rectangle and cut into long strips.
- Shape the strips by gently pressing to make them slightly taller for a chewy texture.
-
Bake
- Preheat the oven to 190°C (375°F).
- Arrange the strips on a lined baking tray and bake for 13–15 minutes.
- Keep a close eye on them—they should be slightly underdone in the centre for the perfect chewiness.
Serving Suggestions
