Pole and line-caught Bonito del Norte (white tuna or Albacore), caught in the Cantabrian Sea when it’s at its best. It comes in a light, clear escabeche (a white wine vinegar and garlic-flavoured sauce). Zallo works with local fishing fleets which adhere to pole-and-line fishing, ensuring no by-catch or damage to the seabed.
