Crispy Patacones with Fresh Guacamole and Zesty Tomato Dip

Transform green plantains into golden, crispy patacones, and pair them with a creamy guacamole and tangy tomato dip. This delightful recipe is easy to prepare and makes for the perfect appetiser or snack. Whether you're hosting friends or enjoying a family meal, this dish brings bold flavours and satisfying textures.


Ingredients

For the Patacones:

  • Green plantains (cut into 1-inch slices)
  • Oil for deep frying

For the Guacamole:

  • 2 avocados
  • 1 small red onion, finely chopped
  • Outer parts of 2-3 tomatoes (reserve seedy parts for sauce)
  • 2-3 garlic cloves, minced
  • 1 chilli, finely sliced (optional)
  • Juice of 1 lime

For the Tomato Sauce:

  • 1 tbsp vegetable oil
  • 1 white onion, finely chopped
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • 4 fresh tomatoes, roughly chopped
  • 400g tinned tomatoes
  • 2 tbsp fresh coriander, chopped

Method

Step 1: Make the Guacamole

  1. Slice the avocados, onion, tomatoes, garlic, and chilli (if using).
  2. Mash the avocados, leaving some chunks for texture. Combine with other ingredients in a bowl.
  3. Add lime juice and mix well. Refrigerate until serving. To keep it fresh, place an avocado pit in the guacamole.

Step 2: Prepare the Tomato Sauce

  1. Heat vegetable oil in a pan. Fry the onion with salt and pepper until translucent.
  2. Add garlic and cook for 2 minutes.
  3. Stir in fresh and tinned tomatoes, cover, and cook for 5 minutes.
  4. Add coriander and simmer for another 2 minutes. Turn off the heat.

Step 3: Fry the Patacones

  1. Heat enough oil in a pan for deep frying. Add plantain slices and fry for about 7 minutes, until they begin to turn golden.
  2. Remove and place between two plates. Press down to flatten into a pancake shape.
  3. Return the flattened plantains to the oil and fry again until crispy and golden brown.
  4. Drain on kitchen paper to remove excess oil.

Serve and Enjoy

Plate the crispy patacones with the guacamole and warm tomato sauce. Best served hot for the ultimate crunch and flavour. Enjoy this irresistible combination as a snack, starter, or side dish!
