MALLORCAN COCA (pizza)
Fresh from holiday Mallorca, here’s a super simple recipe for this Spanish styled pizza that you can find all over the island. Kindly shared by one of our lovely customers.
Dough
300 g plain flour salt
125 ml oil heaped tsp. baking powder
125 ml water
Topping
6 medium tomatoes
Sea salt
3 medium onions
Oregano
Olive oil
Method
Pre-heat oven to 200° C
1. Sieve flour into bowl with salt and baking powder
2. Add oil and water and mix into dough (I use a dough hook but a fork works well)
3. Cover and leave for 10 minutes
4. Spread dough using fingers and palm of hand over a baking tray (about 40 cm X 30 cm or two circular dishes about 26 cm in diameter) and create a rim around the edge.
For the topping
1. Finely slice tomatoes and onions (food blender is useful)
2. Spread sliced vegetables over the dough
3. Smooth with a little olive oil, sprinkle with salt and oregano
Bake in oven for around 40 minutes at 200° C. Check that onions are tender.
Alternative toppings: sliced peppers, courgettes, shredded spinach, garnished with olives,
anchovies
