Fresh Peanut Wraps with Tangy Peanut Sauce
These peanut wraps are light, fresh, and full of vibrant flavours. A perfect summer dish, they’re served raw except for optional warm additions like wonton strips, egg, or chicken. Easy to prepare, they make a refreshing and satisfying meal.
Ingredients
Wrap Filling:
- 400g shredded red cabbage
- 150g shredded carrots
- 1 red bell pepper, thinly sliced
- 100g cooked and shelled edamame beans
- 50g fresh coriander, chopped
- 50g spring onions, chopped
- 50g honey-roasted peanuts
- 1 cup wonton strips (or substitute with strips of plain omelette or chicken)
- 5 wraps
Peanut Sauce:
- 2 Tbsp rice vinegar
- 1 Tbsp soy sauce
- 1 Tbsp lime juice
- 1 Tbsp honey
- 1 tsp minced garlic
- 30g peanut butter
- ½ tsp salt
- ½ tsp crushed red pepper flakes

Prepare the Peanut Sauce:
- Mix rice vinegar, soy sauce, lime juice, honey, garlic, salt, and red pepper flakes in a bowl.
- Add peanut butter last and stir until smooth. Adjust seasoning to taste.

Assemble the Wraps:
- Lay out the wraps and evenly distribute the shredded red cabbage, carrots, bell pepper, edamame beans, coriander, spring onions, and honey-roasted peanuts.
- Add wonton strips, or if using, strips of plain omelette or chicken.

Drizzle and Serve:
- Generously drizzle the peanut sauce over the fillings.
- Fold the wraps, securing the fillings inside, and serve immediately.
Optional: Add chicken, egg, or wonton strips either warm or cold for an extra twist.
