Got any Parsnips still knocking around? Take the opportunity to enjoy a last soup of the Winter :). This is also a great base soup to add anything else you have leftover in the fridge!
Ingredients
- 2 tbsp vegetable oil
- 1 tbsp cumin
- 1/2 tbsp coriander
- 1/2 tbsp turmeric
- 3 green cardamom
- 2 cloves
- 2 medium onions
- 500g parsnips (around 5 medium parsnips), peeled
- 140g dried red lentils
- 2 Bramley apples, peeled
- 1 ½l vegetable or chicken stock
Heat the oil in a large saucepan. Roughly slice the onions and throw them in along with all the spices and some salt and pepper.
Add the parsnips, lentils and apples and stir well. Pour the stock over everything and let the liquid bubble.
Reduce the heat slightly, put a lid on a cook for 30 minutes.
Blend everything into a smooth soup. Serve with warm buttered bread, yoghurt and fresh coriander.
