Ingredients (Please note, these quantities make quite a large amount.)
300g White Sugar
100g Brown Sugar
250g Butter
2 Small Eggs
250g Raisins
350g Flour
2 Big teaspoons Baking Powder
1 Teaspoon Bicarbonate of Soda
1 Teaspoon Cinnamon
Dash of All Spice
Method
Cream the sugar and butter. Separately mix together all the dry ingredients except the raisins.
Heat the oven to 190 Celsius.
Add the eggs to the sugar and butter and beat well. Mix the wet and dry ingredients and the raisins. Mix well until it forms a dough (add a touch more flour if you need).
Split into two pieces and roll each half out. Cut each half into long strips, at the end you will cut molasses bars from each long stick. Squidge them a bit to make them as tall as possible for a thicker chew.
Bake for 13-15 minutes, and be careful not to over or under do, they should be a bit under-done in the middle.
