Yaki Udon | Stir Fried Udon Noodles

Stir Fry

400g Udon Noodles (frozen or cold, precooked, as from a packet)

100g Mushrooms, Shitake, Button or any kind you like.

2 Spring Onions

200g Cabbage/Bok Choy (optional)

1 Tbsp Sesame Oil

250g Meat - (Beef, Chicken, Turkey, Pork, or Shrimp, or Tofu if you prefer)  


The Sauce 

  • 3 Tbsp Dark Soy Sauce
  • 2 Tbsp Oyster sauce (or Worcestershire) 
  • 1 Tbsp Mirin
  • 2 Tsp Brown Sugar
  • 1 Tsp Rice Wine Vinegar

Mix the ingredients for the sauce.


Put the Udon Noodles into boiling water and cook for 2 minutes. Stir them gently (ideally with chopsticks) to unstick them. 


Rinse in cold water and drain your noodles, they should be a bit soft but not overcooked. 


Put a large frying pan on a high heat. Add the oil. Add the Meat and stir fry for 2 minutes before adding the other vegetables.


Stir fry for another 2-3 minutes, mixing gently. Add the noodles and the sauce and continue for about 3-5 more minutes, then serve when cooked through throughout
