Happy Veganuary to one and all!
This is one vegan dessert that is really simple. If you get the quantities a bit wrong, or use the wrong type of oats (we recommend porridge, not large) sometimes it can turn out quite crumbly, but then you've just made vegan granola instead of flapjacks.
Ingredients
200g Porridge Oats
120g Coconut Oil
70g Sugar
3 Tablespoons of Honey or Maple Syrup
Optional – cinnamon, nuts, dried fruit, fresh fruit, chocolate chips, etc. - I love just adding a layer of melted dark chocolate after they have cooked.

Throw the oats in a large saucepan over a medium heat. Add the coconut oil, sugar and honey or syrup. Stir till all the oats are well coated. If using, add the cinnamon, chopped nuts, dried fruit, etc. lower the heat and stir well.

Heat the oven to 160C and line a baking tin with baking parchment, or just use a bit of extra coconut oil if you don't mind doing a bit of digging at the end. Keep stirring the mix and after it has gently cooked for 10 minutes, transfer to the tin, squishing everything down with the back of a spoon.

Bake for 30 - 35 mins until lightly golden. Wait for it cool and then slice and enjoy.
