I tried this cake in Lizzy's on The Green on Newington Green; it was so good I had to make a whole one, to scoff in the privacy of my own home.
Ingredients
3 Sliced Bananas
1 Sliced Large Pear
400g Well Chopped Dark Chocolate
150g Self Raising Flour
120g Soft Butter
75g Dark Sugar
2 Tablespoons of Honey
2 Eggs
1 Teaspoon of Cinnamon
1/2 Teaspoon of Salt
Method
Mix together the Flour, Butter and Sugar until smooth.
Preheat oven to 180/190 Celsius and preheat your cake tin in there.
Mash the chopped banana a little and add, with the pear and chocolate to the mix. Stir, mash, or mix a little.
Add the eggs and beat well. Add the Honey, Cinnamon and Salt and stir. Add a drop of milk if the mix is quite dry.
Grease your preheated tin with butter or oil, and pour all the mix in.
Cook for 45 minutes to an hour, or until it's brown on top and a knife comes out dry (be careful here as sometimes the knife will come out with squishy bits of banana, pear or melted chocolate which may look like uncooked cake dough. If unsure, wait for the knife to cool, lick, dry and repeat somewhere else.
