This cauliflower soup is really warming, creamy and tasty. It really helped me get through last Winter and I hope it can help you too!
Ingredients
2 Tablespoons of vegetable oil
2 Teaspoons of cumin seeds
3 cloves
1 Large white onion, diced
1 Large cauliflower, stems and all
1.5 Teaspoons of salt
3 Small, thin green chillies
1 Litre of stock
Method
Heat the vegetable oil in a large saucepan and add the cumin and cloves. When the cumin starts to crackle, add the onion.
Cook gently for about 10 minutes or until the onion is translucent. Add the cauliflower and salt and fry gently, stirring well.
Slice the chillies and add to the pan. After 2 minutes add the stock. Cover with a lid and cook gently for about 30 minutes or until the cauliflower is totally soft.
Blend the ingredients and add a nice drizzle of cream if you like.
Serve with warm crunchy bread.
