This compote tastes great for breakfast with natural yoghurt and muesli or granola, on top of porridge and can even be used as a spread on bread. It can also be served as a desert, for example with vanilla ice cream (heated perhaps as a balance to the cold ice cream). Anna often
adds a dollop or two to accentuate the taste of both savoury and sweet dishes.
Ingredients:
- 4 pears of a hard variety (Nourished Communities have some very tasty ones!) – peeled, seeded and chopped into ½-1 cm cubes (or as desired)
- 1 apple - peeled, seeded and finely chopped
- 1 tbsp fresh, finely chopped ginger (adjust depending on how much you enjoy ginger)
- Juice of 1 lemon
- 2 tbsp maple syrup
- ¼ cup/60 ml water
- 1 tsp cinnamon and/or cardamom powder. You can also use nutmeg and/or cloves. Be creative! The seeds of ½ vanilla pod tastes good, too.
Put all the ingredients in a pan and heat on the hob until simmering. Leave it to simmer, stirring occasionally, for 15-20 minutes, until the compote has thickened.
Can be stored in a jar in the fridge for at least a week.
