Roasted shawarma-spiced cauliflower, crispy chickpeas, pickled onions, fresh herbs, sweet dates, and a drizzle of smoky tahini-lime dressing... yes, it’s as good as it sounds! 😋 And the best part? You can make this healthy, autumnal salad at home in under 30 minutes. Perfect for a midweek as it’s healthy too!
Ingredients (for 2 portions):
* 1 cauliflower
* 3 tbsp olive oil
* 1 tbsp Shawarma seasoning
* 2 tsp kosher salt
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp smoked paprika
* 1 bunch cavolo nero
* 1 tbsp lemon juice
* 6 Medjool dates, pitted and chopped
* 2 tbsp toasted pine nuts
* 1/2 red onion, pickled in lime juice
* 4 tbsp fresh parsley, chopped
* 2 tbsp fresh mint, chopped
* 1 can Mr Organic chickpeas (drained, rinsed, and air-fried)
* 3-4 tbsp All Dressed Up tahini-lime dressing
Method
1. Roast the Cauliflower: Toss cauliflower in olive oil, Shawarma seasoning, and salt. Roast at 200°C for 15-20 minutes.
2. Air-Fry the Chickpeas: Toss chickpeas with olive oil, garlic powder, onion powder, smoked paprika, and salt. Air fry at 200°C for 15-18 minutes.
3. Massage the Cavolo Nero: De-stem, chop, and massage with lemon juice. Rinse to balance the flavor.
4. Mix the Salad: Add dates, toasted pine nuts, pickled onions, parsley, and mint to the kale.
5. Assemble: Top with roasted cauliflower and chickpeas, and drizzle with tahini-lime dressing.
6. Enjoy! Your quick and delicious autumn salad is ready to wolf down!
